Goat Cheese - Ricotta Mousse
        Makes 1 small bowl, tops about 4 steaks
 Ingredients    
4 oz (1 tube) goat cheese  
3/4 cup heavy whipping cream  
________    
4 oz ricotta cheese  
1 tbls white wine vinegar  
1 tbls ground coriander  
1/2 tsp salt  
1/2 tsp ground black pepper  
     
     
     
     
     
 Directions    
Throw the goat cheese and cream into a bowl and beat it with a hand mixer until you get stiff peaks.

Throw the rest of the ingredients into the bowl and mix it a bit more to combine everything.

Serve this as a dip with some pita chips, or this is awesome as a meat topper (beef, pork, chicken, or fish).
