I use this seasoning blend on just about
everything. Since making just enough for one recipe would be
impractical, I make this in a large quantity and store it in a big
dispenser with a shaker top. I use 1/4 cup for one part of the
proportions listed above, which yields 2 3/4 cups of the mixture. Just
dump all the ingredients in a large bowl, mix them up thoroughly, and
funnel the mixture into your favorite shaker/dispenser. You might
find Emeril’s Essence at Sam’s or Costco where you can buy
the big 21 ounce container for about $7. You can buy the
21 ounce container for what you’d pay for 2 ounces at the grocery store.
If they don’t carry the blend, I recommend buying all of the ingredients
at Sam’s Club or Costco and mixing your own. This stuff keeps. If it
makes you happy, throw the leftover spices in baggies and put it in the
freezer until you need it. |
