1 cup | wheat flour | |||
1 cup | cornmeal | |||
1/2 cup | sugar | |||
1 tbls | baking powder | |||
1 tsp | salt | |||

1 1/2 cups | milk | |||
2 | eggs | |||
1 stick | butter, melted | |||
1 tsp | vegetable oil | |||
1/4 cup | molasses, full flavor | |||
Directions | ||||
Preheat the oven to 400°. In a mixer equipped with a beater, combine the wheat flour, cornmeal, sugar, baking powder, and salt. Mix to combine the dry ingredients. Add the milk, eggs, and melted butter. Coat your measuring cup with the vegetable oil (so the molasses doesn't stick to it) and add the molasses. Mix on medium for about one minute to make a smooth batter. Pour the batter into a greased and floured 9x9 baking pan (or spray it with Baker’s Joy). You could pre-make the batter and leave it in the refrigerator until you're ready to bake it. Bake at 400° for 30 minutes until the interior temperature is about 180 . Take it out and flip it onto a cooling rack. Serve it a warm if possible. |
