Parsnip Purée | ||||

Ingredients | ||||
1 lb | parsnips, peeled, 1/4" sliced | |||
1/2 tsp | salt | |||

1 cup | heavy whipping cream | |||
4 oz | (1 stick) butter, melted | |||
1 tbls | dried thyme | |||
1 tbls | minced garlic | |||
1/2 tsp | salt | |||
1/2 tsp | ground black pepper | |||

Some | fresh parsley or chives for garnish | |||
Directions | ||||
Put the sliced parsnips in a large saucepan and cover with water. Add a
good sprinkle of salt. Place it over medium heat and bring it to a
simmer. Cook until tender, the tip of a pairing knife should easily go
through. This will take about 15 minutes. Drain the parsnips in a colander in the sink. Add the parsnips to a food processor bowl equipped with the blade attachment. Add the remainder of the ingredients (except for the garnish) into the food processor. Blend for about 20 seconds until very smooth. Transfer the mixture into your serving dish and garnish with fresh parsley or chives. This doesn’t look like much, but I guarantee people will be licking their plates. |
