Stuffed Mushrooms
        Makes about 48 mushrooms
 Ingredients    
10.4 oz (2 - 5.2 oz tubs) Boursin cheese, softened  
1 lb bacon, diced  
  Emeril's Essence  
________    
1/2 onion, finely diced  
  salt  
  granulated garlic  
  ground black pepper  
  dried sweet basil  
________    
14 oz (1 package) fake crab meat chunks, finely diced  
4 oz (1/2 bag) Italian cheese shreds  
1/4 cup Miracle Whip  
1/4 cup Grey Poupon Dijon mustard  
2 eggs  
1 tsp salt  
1 tsp granulated garlic  
1 tsp ground black pepper  
1 tsp dried sweet basil  
1 tsp smoked paprika

3 lbs mushrooms, the big ones  
  smoked paprika  
         
 Directions    
Preheat the oven to 350°.

Unwrap the Boursin cheese, chop it up roughly, and throw it in a large bowl.

Throw the bacon in a frying pan over medium heat and season it with some Essence. When it's just to the crispy stage, remove the bacon and throw it on top of the boursin cheese leaving the bacon grease in the pan.

Throw the onion in the bacon grease, season it with a little salt, granulated garlic, pepper, and basil. Saute until translucent, then throw the onions and all the bacon grease (yes, just do it!) in the bowl with the bacon and Boursin cheese. The heated bacon and onions will help melt the cheese making it easier to mix up.

Throw the rest of the ingredients (except for the mushrooms) into the bowl. Mix it by hand (please use a spoon) until well combined.

Spray a couple jelly roll pans or cookie sheets with Pam. Snap off the stems of the mushrooms and clean out a little pocket with a knife. With your knife, shave off a flat spot on the cap so they won’t roll around on the pan. Place the mushroom caps on the pan top-side down. Using a small cookie scoop (the one with the spring release thingy), portion out the mixture onto the mushrooms. Fill them up, but don't go crazy overfilling them. You don't have to use all the mixture. If there's any leftover, refrigerate that for another meal. Once you’re done, sprinkle the tops with a little more smoked paprika so they look pretty.

Bake the pizzas at 350° for about 20 minutes until heated through.
