Dickinson's Sweet 'n' Hot Pepper & Onion Relish
         
Here's a product that is always in my pantry's inventory.  The name of it sounds long and weird and the grocery store doesn't always know where they should stock it.  You might find it with the pickles or the jellies or even next to the cream cheese, but it's there somewhere.

I love grocery shopping.  I always glance at everything on the shelves.  You never know what you might find.  If it makes it to the shelves, it has to make the cut though a lot of other people's scrutiny.  It may not be entertaining to your individual palate, but you know it has to taste good to someone.  When I see something that sounds odd at the store, I will always run in through my mental palate and see if it intrigues me.  This one did, and I'm very glad I tried it.

In cooking, it's usually about hitting the right balance between the basic taste elements.  This product nails the sweet to heat ratio, and contributes just the right texture.  Even though its name includes peppers and onions, it's the tomato brightness that comes forward.  You can use this in a variety of applications, but I like it predominately as a fish topper.  It wakes up the fish, but doesn't overpower it.  It also excels when mixed with cream cheese for a sweet and zesty dip.  Check out the recipe for my Sweet Southwestern Dip.  Simple yet outstanding!  This is carried just about everywhere; you should have no problem finding it.
