Burritos with a Sour Cream Sauce
        Serves 6
 Burritos    Sour Cream Sauce
6 flour tortillas, burrito size   4 tbls butter, sliced
________     1/4 cup all-purpose flour
  Fill them with whatever you like using these basic proportions. Don’t overstuff! For each burrito, use:   ________  
      2 cups chicken broth (or 2 cups of water and 2 tsp chicken soup base, heated up)
1/2 chicken breast or   1 tsp salt
1/4 lb steak or   1 tsp ground black pepper
7 medium shrimp   1 tsp granulated garlic
      ________  
1/2 slice 1/2" thick onion, coarsely chopped   1 cup sour cream
1/4 bell pepper, coarsely chopped   6 tbls Cherchie's Pretty Hot Peppers (from the designer pickled things aisle, or your favorite diced green chilies)
a few jalapeņo slices      
         
1 tbls salsa      
1/4 cup cheese, grated      
         
 Burritos    
Preheat the oven to 425°.

Whatever you plan on stuffing them with, fully cook and season your proteins and vegetables before rolling them in. They will not fully cook inside the wrapper.

Line a 9x13 pan with foil and spray it with Pam. Place a burrito wrapper on a cutting board. Place your fillings in the middle, leave about 1 1/2" from each side, and cover it about 1/3 third from top to bottom. Fold the bottom half of the wrapper over the filling, fold both sides toward the center, then fold the top of the wrapper down to make your tasty package. Place the burrito seam side down in the 9x13 pan and repeat for the rest.

Make the sour cream sauce per the directions below. Pour the sauce over the burritos. Throw a handful of cheese shreds over the top.

Bake at 425° for about 25 minutes.
 
 Sour Cream Sauce    
In a large saute pan over medium-low heat, melt the butter then sprinkle in the flour. Use a spatula and keep stirring and scraping until all the flour is incorporated. Stir in the chicken broth, salt, pepper, and granulated garlic. Let it come up to a strong simmer for about 5 minutes to thicken it up.

Turn the heat down to low. Stir in the sour cream and the peppers. Let it gently simmer for about 10 minutes. Turn off the heat until you’re ready to pour it over the burritos.
